Spicy Mexican Bean Burgers


Spicy Mexican Bean Burgers

This recipe we made up from scratch on a wonderfully warm spring evening. A real simple one to make with only a few ingredients.

You’ll need:
-        A tin of Kidney Beans                                     - 1 Red or Yellow  pepper
-        Some flour                                                       - a little bit of oil
-        1 onion                                                             - 2 cloves of garlic
-        1 tbsp tomato puree                                     
-        Some cumin, pepper, chilli powder and herbs

1.      Mash up the kidney beans
2.      Chop up the pepper into small chunks
3.      Dice the onion and crush the garlic
4.      Mix everything  together in a bowl with flour and oil until of malleable consistency
5.      Add herbs & spices (with generous amounts of the chili powder)
6.      Roll into small burger-balls with a spot more flour
7.      Bake in oven until cooked
8.      Serve with salad or in a sandwich for a delicious spring lunch
